Hi--this is in response to the comment you left on my blog about the Candy Cane Joe-Joes. (Sorry--couldn't find another way to contact you!) As to the yield, I got about 30 small sandwich cookies out of it (so 60 cookies rounds total) but I rolled my dough thin (1/4") and the rounds were small, about 2".
I actually don't usually refrigerate them, since the candy cane pieces on the sides will absorb moisture and get sticky/runny in the fridge, plus they're usually eaten within a day or two. But I might be more casual about food refrigeration than some other folks. :)
